QUICK Salmon Patties

If you love Salmon, I hope you will try these super simple and delicious Salmon Patties ASAP!!!!! But first the quick story behind it.

A few weeks ago my daughter in love, Madison, told me about this show with chef Jamie Oliver where he uses 5 ingredients to create awesome dishes. So one night my sweet hubby was on a conference call and I decided to watch the Jamie Oliver 5 Ingredients show. I LOVED it. The recipes were quick and easy and while I do love to spend hours in the kitchen sometimes making special dinners with lots of components, I also need quick, easy and delicious recipes. So a couple of days later I ordered the Jamie Oliver 5 Ingredients Quick and Easy Food on Amazon and happily received in the mail 2 days later! YEAH! Like Christmas in June! Anywho, one of the recipes that I saw on TV that enticed me to buy the book was his Quick Asian Fishcakes. I made a couple of modifications and they turned out fantastically!

Today is my husband Jeff's birthday! So I decided to make these for his at-home birthday lunch. I added a couple more of ingredients so it's 7 ingredients, not 5 but they are most likely things you already have on hand in your pantry. It was an unexpected treat for him and beats the heck out of his usual turkey sandwich!

Ingredients:

1 stick of lemongrass (or 1-2 teaspoons of lemongrass paste)

2 inch piece of fresh ginger root (peeled and finely chopped)

1/2 bunch of fresh cilantro (finely chopped)

1 pound of salmon filet (boned and skin removed)

Optional 1 teaspoon soy sauce

Optional 1/2 teaspoon garlic powder

4 teaspoons of chili jam


Directions:

  • If you can't find lemongrass paste and then whack the lemongrass stick against your work surface and remove the tough outer layer and chop finely.

  • In a medium-sized bowl add the chopped lemongrass, ginger, and cilantro.

  • Chop the salmon into 1/2 inch chunks, then push half the salmon to one side of your cutting board.

  • Chop the remaining salmon until super finely chopped, almost like a puree.

  • Add the salmon to the herbs and mix together

  • Season the mixture with 1 teaspoon of salt and 1/2 teaspoon of pepper and if desired a 1/2 teaspoon of garlic powder and 1 teaspoon of soy sauce.

  • Divide the mixture into 4 patties about 3/4 -inch thick.

  • Place a large non-stick pan on medium-high heat with 1 tablespoon of olive oil.

  • Cook the patties for 3 minutes on each side or until there is a nice golden crust on them. Resist the urge to move them around while they are cooking as they may fall apart if they are not done browning.

  • Remove cooked patties from the pan to a serving plate.

  • With the pan off add the chili jam and 2 tablespoons of water and mix, then return the pan to medium heat and let the sauce reduce for a minute and pour over the salmon patties!

  • Prepare to be wowed by this super healthy and delicious dish!!!!
